Background on Country Time Lemonade and Why I Chose It:
Fructose: C6H12O6
(also known as d-Glucose, or “Pentahydroxyhexanal” or “(3S,4R,5R)-1,3,4,5,6-Pentahydroxyhexan-2-one”)
The chemical structure of Fructose, according to chem.purdue.edu |
Derived from: Fructose is often derived from sugar cane, sugar beets, maize, and honey
Health effects: Too much fructose can lead to insulin, obesity, elevated cholesterol, type 2 diabetes, and cardiovascular disease
Physical and Chemical Properties:
- Molar Mass: 180.156 g/mol
- Density: 1.694 g/cm3
- Melting Point: 103 °C
- Solubility in water: ~4000 g/L (25 °C)
- Appearance: (Glucose, which has identical chemical formula): White Powder
Purpose of Ingredient: Fructose is a sweetener, so fructose is added to make the lemonade sweeter
Citric Acid: C6H8O7
The Lewis Dot Structure of Citric Acid, according to chem.okstate.edu |
(also known as “2-Hydroxypropane-1,2,3-tricarboxylic acid”)
Derived from: Citrus fruits, like lemons and limes
Health effects: Serious side effects can include muscle twitching, weight gain, weakness, rapid or shallow breathing, fast heart rate, and convulsions.
Physical and Chemical Properties:
- Molar Mass: 192.123 g/mol (anhydrous), 210.038 g/mol (monohydrate)
- Density: 1.665 g/cm3 (anhydrous), 1.542 g/cm3 (18 °C, monohydrate)
- Melting Point: 156 °C
- Solubility in water: 147.76 g/100 mL (20 °C)
- Appearance: Crystalline white solid
Purpose of Ingredient: It is a strong edible acid, used as a preservative and for flavoring
Sodium Citrate: Na3C6H5O7
(“Trisodium citrate” or “Trisodium 2-hydroxypropane-1,2,3-tricarboxylate”)
Derived from: molasses
Health effects: (same as citric acid:) Serious side effects can include muscle twitching, weight gain, weakness, rapid or shallow breathing, fast heart rate, and convulsions.
Physical and Chemical Properties:
- Molar Mass: 258.06 g/mol (anhydrous), 294.10 g/mol (dihydrate)
- Density: 1.7 g/cm3
- Melting Point: > 300 °C
- Solubility in water: 92 g/100 g H2O
- Appearance: White crystalline powder
Purpose of Ingredient: Additive, for flavor or preservative. It has a mildly tart flavor.
